Chicken and Wild Rice Soup





4 chicken breasts, cooked and cubed

2 boxes UNCLE BEN'S® long grain and wild rice with herbs and seasonings (Original) (fast cook is great for decreased cooking time!)

2 cans cream of celery soup (I like cream of mushroom better, Cream of chicken can be used)

Milk

Cook rice according to package directions. In large pan, combine soup and 2 soup cans milk. Add rice and chicken, stirring well. Add additional milk to thin as desired.

Tortellini Soup


1 onion

1 1/2 tsp garlic

3 cans vegetable broth

3/4 cup water

1 cup tortellini

1 can crushed tomatoes (big can)

5 oz pkg baby spinach

garlic salt, black pepper, pizza seasoning, oregano and basil (to taste)




Saute onion and garlic in a large pot. Add vegetable broth, when boils add water, tortellini, and crushed tomatoes. When tortellini is cooked add spinach, and rest of spices, about a pinch of each.

Vegetable Soup

1 lb stew beef cut into small pieces
soup bone
chopped onion
2 cans chopped tomatoes
potatoes of small pasta
water
V-8 Juice
Vegetables (green beans, corn, butter beans, peas, carrots, ect.)

Lightly brown beef in a large pot with 1 tbsp oil. Add 2 qts water and soup bone and bring to a boil. Reduce heat and simmer covered for at least 30 minutes. Add diced potatoes or pasta pieces. Cook for 10 minutes. Add tomatoes and V-8 juice, bring back to a boil, reduce heat and simmer for 10-15 minutes. Add vegetables and simmer for 20 minutes. Soup bone can be removed or left in the pot.

*I used canned(drained) or frozen mixed vegetables instead of doing it all separate*
